Fried Garlic and Parmesan Gnocchi recipe
This is a great alternative to cooking gnocchi in water as it makes for tiny potato morsels that are almost like mini roast potatoes. This version which tosses the gnocchi in butter, garlic and Parmesan is perfect for serving as it is or as a side to any meat dish.
Ingredients:
- 600g gnocchi
- 2 tbsp. butter
- 6 tbsp. Parmesan cheese
- Salt and pepper
- 1 tbsp. freshly chopped sage
- 1 clove of garlic, minced
Directions:
Bring a large pot of water to the boil and add the gnocchi. Cook until they start to float to the surface, around two minutes, then drain.
Melt the butter in a frying pan. Cook the garlic for a couple of minutes, until it starts to brown slightly, then add the sage, salt and pepper, and cooked gnocchi. Add half the Parmesan and stir well, then serve hot with the remaining Parmesan sprinkled over the top.

I made this, but it was far to greasy and heavy. I doubt I will make it again. If there was a way to rid all of the excess grease perhaps it would be better. The taste was quite nice aside from the oil.
